I’m obsessed with the combination of chocolate and coconut right now. This Healthy Chocolate Coconut Slice satisfies both requirements, it’s super easy to make and is gluten-free and vegetarian.
I love bliss balls and this recipe is inspired by them – but this week I’m so time poor I couldn’t be bothered rolling the ingredients into balls so this was the end result instead!
It tastes so decadent you wouldn’t even know it was healthy ๐

INGREDIENTS
- 400g pitted dates (I used Californian Medjool Dates as they are super sweet and juicy, and removed the pits myself)
- 1 cup desiccated coconut
- 1/4 cup chopped nuts (I chose peanuts)
- 1/4 cup ground almond meal
- 2 heaped tablespoons cocoa or cacao powder
- 1 tspn vanilla extract
METHOD
Place dates into a bowl and cover them with hot water. Soak for 10 minutes until softened. Don’t skip this step; I did and it just turned into a single large dangerous blob in the food processor!).
Drain the dates and either blend, process or mash with a fork until all big lumps are gone.
Add remaining ingredients in the bowl and stir to combine.
Line a loaf tin with baking paper and press mixture into the bottom of it. Cover and place in fridge for 1 hour or until firmer to the touch.
Cut into squares and store in the fridge. This mixture should make around 24 squares.
