These are the simplest tarts imaginable! The combination of luscious sweet short pastry filled with creamy full-flavoured Greek yoghurt topped with passion fruit syrup is so easy to prepare and tastes divine.
– Baking spray
– 500g Edmonds sweet short pastry sheets (2 of the 4 in the pack)
– 1¼ cups Meadow Fresh Greek Yoghurt
– 4 tblspns passionfruit syrup OR
– 2 cups berries or grilled fruit pieces
Roll out the pastry, and press into well-sprayed tartlet pans. Top with baking baking paper and add cooling beans or weights to bake the pastry cases blind.
Pop into oven at 200°C and bake for 10 mins or until golden on the edges.
Remove from oven, lift out the weights and baking paper. Continue baking for 5 to 10 mins until completely cooked through. Cool.
When ready to serve, arrange pastry shells on serving platter and fill with a good dollop of the yoghurt and top with fruit or fruit syrup
